Tea Flavored Baked Apples

From The Tea Box

Baked apples:
7 tablespoons butter
6 baking apples (preferably Golden Delicious or Pippin)
2 tablespoons honey

Apple-tea jelly:
1 cup apple juice
4 teaspoons sugar
2-1/2 teaspoons pectin
1 teaspoon (preferably Assam or BOP)
Ceylon tea

Tea sorbet (optional):
1/2 cup sugar
2 tablespoons light corn syrup
2 teaspoons Russian-style tea or (preferably BOP) Ceylon tea
Juice of 1 lemon, strained
2-1/2 teaspoons pectin

 

To prepare baked apples: Butter a rimmed baking sheet. Preheat the oven to 325°F. Wash apples. Cut in half vertically and remove the core with a spoon. Arrange the apples on the baking sheet, rounded side up. Place a chunk of butter on each apple half. Coat them with honey and pour 2 tablespoons water onto the sheet. Bake until the apples are tender, about 20 minutes.

To prepare apple-tea jelly: Bring the apple juice to a boil; mix in the sugar. Whisk in the pectin. Remove from heat; add the tea and steep for 2 minutes. Strain and refrigerate.

To prepare tea sorbet (optional): Combine 2 cups water, sugar and corn syrup in a saucepan and bring to boil. Add tea, remove from heat and steep 2 minutes. Strain and chill. Add lemon juice. Churn in ice cream maker.

To serve: Spread apple-tea jelly in a shallow bowl. Add 2 baked apple halves per serving. Top with a scoop of tea sorbet. If not making homemade sorbet, rather than skipping it completely, you might consider using store-bought vanilla ice cream or sorbet.

Yields 6 servings.
