
Potato Carrot Roll

pounds potatoes
1 cup milk
1 tablespoon butter or margarine
1 egg, beaten
Salt, to taste
Filling:
1 pound carrots
2 tablespoons butter or margarine
1 tablespoon sugar
1/2 teaspoon ground nutmeg
Pinch salt
3 tablespoons water
1 egg, beaten
Sour cream, for serving
Yields 6 servings.
Peel and boil the potatoes whole until soft, about
40 minutes. Drain and mash them. Mix in the milk,
butter, egg and salt.
To prepare filling: Peel and cut the carrots into
thin strips. Cook them in the butter, sugar, nutmeg,
salt and water over medium heat until they soften,
about 10 minutes.

On a clean, moist towel, spread the mashed potatoes
into a uniform layer. Then spread a layer of carrots
on top. Grabbing hold of one long end of the towel,
fold over the two layers slowly into a roll.
Place the roll on a greased cookie sheet and brush
with the egg. Bake at 350 F until it becomes firmer
to the touch and browns, about 30 minutes. When ready,
cut into thick slices and serve with sour cream.
