Pears with Cinnamon Caramel Sauce

From Desperation Entertaining!

8 tablespoons (1 stick) butter
1 cup lightly packed light brown sugar
1/2 cup heavy (whipping) cream
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
4 cans (15 ounces each) pear halves packed in fruit juice
Cinnamon sticks and fresh mint leaves, for garnish (optional)
Yields 8 servings.

Cut the butter into 4 pieces and place in a 4-cup glass measure. Add the brown sugar, cream, corn syrup and cinnamon. Cover with microwave-safe plastic wrap and cut a small vent in the center. Microwave on high until the mixture boils, about 3-1/2 minutes.
Meanwhile, drain the pears and discard the juice. Place the pears, cored side up, in a microwave-safe dish.

Remove the sauce from the microwave oven. Microwave the pears, uncovered, on high until warmed through, about 2 minutes.

 

While the pears are warming, uncover the sauce and stir well.

To serve: Put 2 pear halves in each of 8 serving dishes, keeping the cored side up and drizzle some sauce evenly over each pear, letting the sauce pool in the cored centers of the fruit. Garnish with cinnamon sticks and/or mint leaves, if desired.
