tablespoons (1 stick) butter
1 cup lightly packed light brown sugar
1/2 cup heavy (whipping) cream
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
4 cans (15 ounces each) pear halves packed in fruit
juice
Cinnamon sticks and fresh mint leaves, for garnish
(optional)
Yields 8 servings.
Cut the butter into 4 pieces and place in a 4-cup
glass measure. Add the brown sugar, cream, corn syrup
and cinnamon. Cover with microwave-safe plastic wrap
and cut a small vent in the center. Microwave on high
until the mixture boils, about 3-1/2 minutes.
Meanwhile, drain the pears and discard the juice.
Place the pears, cored side up, in a microwave-safe
dish.
Remove the sauce from the microwave oven. Microwave
the pears, uncovered, on high until warmed through,
about 2 minutes.
