Orange Muffins

From Honey: A Connoisseur's Guide With Recipes

1 cup sifted unbleached white flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup raw wheat germ
1/4 cup unsalted butter, at room temperature
1/4 cup (preferably orange blossom) honey
1 egg, beaten
Grated rind of 1 orange
1/2 cup freshly squeezed orange juice

Preheat oven to 375°F. Butter a muffin tin. Sift the flour with the baking powder, soda and salt. Add the wheat germ and set aside.

Cream the butter, add the honey and beat until smooth and fluffy. Blend in the egg, orange rind and orange juice. Add the dry ingredients to the creamed mixture, stirring just until all the ingredients are moist. (The batter will look lumpy.)

 

Fill the greased tins two-thirds full and bake for 20 minutes, or until muffins are rounded and brown. Turn out immediately, bundle in a cloth-lined basket, if desired. Good served with butter and honey.

Yields 12 muffins.
