Salad:
2 (14-ounce) cans hearts of palm, drained and thinly
sliced
2 cups chopped lettuce greens
Dressing:
1/2 cup softened vanilla ice cream
1/2 cup mayonnaise
1 tablespoon creamy peanut butter
1 drop green food coloring, optional
Rest of salad:
1 medium pineapple, cubed
2 bananas, sliced
2 to 3 tablespoons chopped dates
Candied ginger, for garnish
Yields 4 servings.
To
prepare salad: In a large bowl, combine hearts
of palm and lettuce greens. Set aside.
To
prepare dressing: In a small bowl, gently mix
dressing ingredients. Gently toss dressing with salad. |
