Garlic Pickled Mushrooms

From Nourish

1/2 pound mushrooms, stems removed
2 large cloves garlic, very finely chopped
1-1/2 teaspoons toasted sesame oil
1 tablespoon tamari or soy sauce
1-1/2 teaspoons lemon juice

Slice the mushrooms thickly. Place in a large bowl. Add the rest of the ingredients and mix well. Marinate for 30 minutes to 1 hour. Drain before serving. (These can be eaten like a pickle or they are a good addition to a broccoli or bean salad. The liquid is good served over vermicelli.)

Yields 8 servings.
