APPLE SALSA FRESCA

1/4
cup apple juice
2 cups peeled, cored and diced green apples
1/2 cup chopped red onions
1/2 cup seeded and diced fresh poblano chiles (see note)
1/2 teaspoon minced fresh oregano
1 tablespoon sugar
1 tablespoon freshly squeezed lime juice
1 tablespoon seasoned rice wine vinegar
Combine
all ingredients, mixing well. Serve chilled with tortilla chips.
Excellent served with salmon, pork or lamb. (If desired, warm the
salsa quickly in a saute pan before spooning over meat or fish.)
Yields
3 cups.
Note:
Experts recommend wearing rubber gloves when handling chiles
and avoiding touching your eyes, nose or mouth during or after working
with chilies.
