At a time when size and color dictate produce sales, La Nogalera hopes to win people over with a return to flavor and aroma. Loosely translated, la nogalera means walnut grove, which befits this walnut specialty. Their nuts come from a combination of Concord, Placentia, Payne and Lompoc varieties, which are roasted and cold-pressed to produce the oil. The can must be refrigerated after being unsealed, but is still good after two years if left unopened.

Walnut oil is not the best to cook with, but has a myriad of other edible uses. Bake with it to give your desserts an added nutty flavoring; toss it with pasta or vegetables, or use it on salads as dressing. Our favorite thing to do is mix it with honey and use the combination instead of maple syrup with pancakes. Beware if you're dieting, however, for walnut oil has a high caloric content per serving.
