Dormaar & Sons is a small, family-run fish smoking plant
located on Prince Edward Island just off the coast of Canada.
Offering a wide variety of smoked foods from the sea, the
company uses traditional European methods to make its products.
Too many smoked meats tend to have an artificial smoky flavor
with an unsavory aftertaste, but not those from Kim Dormaar
& Sons. Their smoked Atlantic salmon is buttery, moist
and has a delicious natural smoky flavor without being too
salty. The delicacy is made from salmon caught in the Bay
of Fundy and off the coast of Newfoundland. Next, it is
prepared by hand-salting the flesh, drying it in the open
air, then finally cold smoking it with a fire of aromatic
wood native to the area. No sweeteners or artificial preservatives
are used. Their smoked eel is of equal high quality and
extremely moist.
Try
the smoked salmon thinly sliced on bagels with cream cheese
for breakfast, on crackers or in dips as hors d’oeuvres.
Get creative with a smoked salmon pasta made with farfalle,
cream and petit pois or a brunch dish with scrambled eggs,
tomato, chives and chunks of goat cheese.
