Scharffen Berfer Chocolates

Scharffen Berger Chocolate Maker was founded in 1996 by wine and Champagne maker John Scharffenberger—who sold his Scharffenberger Cellars to LVMH (Veuve Clicquot and Moët et Chandon Champagnes)—and his partner Robert Steinberg, a physician-turned-chocolatier. The goal was to create rich, pure chocolate from the best cacao. They succeeded. We sampled their 1-ounce sampler 8-pack ($16) consisting of Nibby, ultra-smooth 62 percent semisweet, and 70 percent bittersweet.

The dark, delicious chunks were perfect, not too sweet or too bitter, with a nice but granular consistency. Some may prefer creamier, gooier chocolate that melts instantly, but we believe that you'll agree it's a bite of true chocolate-making excellence. Scharffen Berger is also good for cooking and used by chefs nationwide; Martha Stewart and Julia Child both are fond of it.
