Every
recipe in this chubby cookbook has a helpful "What Can Go Wrong?" section,
but if you follow author Kimball's advice, it's much more about what
can go right. He's the founder and editor of Cook's Illustrated
magazine, the acclaimed testing ground for recipes. Like in the magazine,
the luscious recipes in The Dessert Bible have been tested umpteen
times to find precisely what nuances make the absolute best chewy,
fudge brownie, buttermilk cupcake, chocolate chip cookie or apple pie.
There are "best" versions of lots more exotic treats, too. How about
Rose Water-Pistachio-Cardamom Rice Pudding, Roasted Apple Bread Pudding
or Souffléed Lemon Custard? Kimball is an exceptional guide who provides
fun reading prior to recipes as to exactly what went right and wrong
during his test runs.
